I tracked down this true Roman-style eatery based on a cookbook recipe that came from its kitchens, an amatriciana bianca sauce that predates the 16th-century advent of tomatoes from the New World. In wood-paneled rooms filled with businessmen and a few British ex-pats you can discover the simple joy of this powerful sauce made from pancetta fried with garlic cloves in pepperoncino-spiked olive oil, tossed with fresh ribbons of pasta and dusted with parmigiano. Other worthy dishes include tortelloni ricotta e spinaci (fresh leaves of white and green pasta wrapped around ricotta and spinach in a light tomato sauce), fettucine al porcino (noodles with porcini mushrooms), and involtini alla romano (veal rolls).
