Antica Locanda Sturion
This wonderful little inn has been taking in paying guests since 1290, making it one of the oldest hotels in Venice (it even appears in some of the Renaissance paintings in the Accademia Galleries). There is a prodigious number of steps to climb up to get here, but it's worth the haul. Thoroughly renovated with modern amenities and furnishing in the eveer-popular 18th century Venetian style by Scottish-born Helen and co-owner Flavia.
Though it is right on the Grand Canal, sadly only a pair of rooms—heavily requested—actually offer views over the canal to the Rialto Bridge (and, subsequently, cost a bit more—but they're also sizeable, able to accommodate three or four people each). The rest of the guests can be satisfied with rooftop panoramas from their bedroom, and the Grand Canal view from the breafkast room.
